CLEANSING CHICKEN SOUP – makes 6-8 servings
INGREDIENTS
- 1 large chicken breast (bone-in, skin on)
- 3 chicken wings
- 1 medium-sized onion, cut into quarters
- 5 cloves of garlic
- 2-1in pieces of ginger
- 3T kosher salt
- 1T cracked black pepper
- 1T garlic powder
- 1t cumin
- 1t turmeric
- 2 sprigs of dill
- 1/2 lemon
PREPARE
- In a large pot, add the onion, garlic, and ginger
- Add the chicken pieces on top and season with salt, pepper, garlic powder, cumin and turmeric
- Add the dill to the pot
- Fill with water until the chicken is covered
- Allow to heat until boiling, then lower to medium-low and set your timer for 30mins
- At the 30min mark, remove the chicken breast meat, shred and set aside in a bowl. Return the chicken breast carcass to the pot
- Allow the soup to simmer on low for another hour (or longer, if you like)
- Once ready to serve, remove all of the bones/meat (save the wings! That’s another recipe)
- Squeeze the lemon into the broth, and season to taste
- Add the shredded breast meat back into the broth
ENJOY!
We like to add either wavy egg noodles or thin egg noodles as well, and top it off with some fresh dill. Comfort in a bowl, filled with everything that’s good for your body and soul.
